  • 6 large 6 portobello mushroom caps

  • 1/2 pound 1/2 Italian sausage

  • 1/4 cup 1/4 chopped onion

  • 2 tbsp 2 blanched finely ground almond flour

  • 1/4 cup 1/4 grated parmesan cheese

  • 1 tsp 1 minced fresh garlic


  • Use a spoon to hollow out each mushroom cap, reserving scrapings.
  • In a medium skillet over medium heat, brown the sausage about 10 minutes or until fully cooked and no pink remains.
  • Drain and then add reserved mushroom scrapings, onion, almond flour, Parmesan, and garlic
  • Gently fold ingredients together and continue cooking an additional minute, then remove from heat.
  • Evenly spoon the mixture into mushroom caps and place the caps into a 6″ round pan.
  • Place pan into the air fryer basket.
  • Adjust the temperature to 375°F and set the timer for 8 minutes.
  • When finished cooking, the tops will be browned and bubbling.
  • Serve warm.
