  • 1 cup 1 ground almond flour

  • 1/2 cup 1/2 powdered erythritol

  • 1/2 tsp 1/2 baking powder

  • 1/4 cup 1/4 unsalted butter, melted

  • 1/4 cup 1/4 unsweeted almond milk

  • 2 2 2 large eggs

  • 1 tsp 1 vanilla extract

  • 1 1 1 medium lemon

  • 1 tsp 1 poppy seeds

Directions

  • In a large bowl, mix almond flour, erythritol, baking powder, butter, almond milk, eggs, and vanilla.
  • Slice the lemon in half and squeeze the juice into a small bowl, then add to the butter
  • Using a fine grater, zest the lemon and add 1 tablespoon zest to the batter and stir.
  • Add poppy seeds to batter.
  • Pour batter into nonstick 6″ round cake pan. Place pan into the air fryer basket.
