Ingredients

  • 4 cups 4 (About 800 G) Dried Chickpeas

  • 2 tsp 2 Baking Soda

  • 2/5 cup 2/5 Tahini

  • 2 tsp 2 Minced Garlic

  • Salt

  • Olive Oil

  • Water

Directions

  • Clean and rinse the chickpeas and let them soak in water together with a teaspoon of baking soda overnight.
  • Rinse and drain. Place them in a saucepan, cover with cold water, and add a teaspoon of baking soda. Boil over high heat until the chickpeas have softened, about 1 hour.
  • When the chickpeas are done, the shells will float to the surface. The more peels you remove, the better the result.
  • Mix the chickpeas into a paste while they are still warm.
  • Add tahini, garlic, lemon juice, and salt.
  • Finally, Decorate with whole chickpeas and olive oil before serving.
